Enchiladas

Sarah was home today and made homemade beef enchiladas. I decided to post a picture and the recipe (here you go Abbey). They were wonderful and the girls loved them also.


Here is the recipe:

1 lb. or more of ground beef
1 T flour
1 small can tomato sauce
1 T. chili powder
1/2 t. salt
1/2 t. oregano
1/4 t. garlic powder
1/3 c. water
1 cup sour cream
1 beef bouillon cube
1/2 cup boiling water
1 cup half and half
1 pkg. tortillas (8-10)
Shredded cheddar or Mexican cheese

Brown beef and drain. Add flour, tomato sauce, chili powder, salt, oregano, garlic powder, and 1/3 cup water. Simmer for 10 minutes. Remove from heat and stir in sour cream. Dissolve bouillon in boiling water; stir in half and half. Dip tortillas into cream/bouillon mixture. Spoon 1/4 cup beef mixture onto each tortilla; roll up and place seam side down in greased 9*13 pan. Pour remaining cream mixture over tortillas. Sprinkle with cheese and bake at 350 degrees for 20-25 minutes. (Can be made ahead and refrigerated for several hours or frozen. Add cheese when ready to bake.)
